Moroccan Tajine

4 cloves of garlic, minced
1 onion, finely chopped
1 handful of chopped coriander
1 handful of chopped parsley
1 pinch of saffron pistils
1 tsp ground ginger
1 tsp ground black pepper
1 tsp Ras el Hanout
1/2 tsp ground cumin
1 tsp turmeric
1 handful of unpitted olives
500 g sliced veggies (like zucchini, cauliflower, potato, capsicum etc.)
1/2 cup of water
1 branch of cherry tomatoes
1 Turkish bread
Directions
- Mince the garlic and finely chop the onion, coriander, and parsley and put into a big mixing bowl. Cut your veggies into bite-sized pieces.
- Sprinkle in the saffron pistils, ground ginger, ground black pepper, Ras el Hanout, ground cumin, and turmeric. Stir well to coat the onions and garlic with the spices.
- Add all your vegetables to the mixture and stir again to coat all the veggies with the spices.
- If using a traditional clay tajine, preheat it slowly on low heat. If using a modern tajine pot or a heavy-bottomed pot, you can start with medium heat.
- Add the veggie-herb mixture to the tajine. Pour in the 1/2 cup of water on top of the tajine. Bring the mixture to a gentle simmer. Cover the tajine and let it cook on low heat for about 30 minutes, allowing the flavours to meld together.
- After 30 minutes, add the unpitted olives and cherry tomatoes to the tajine. Cover the tajine again and let it cook for an additional 10 minutes, ensuring all ingredients are tender and the flavours are well combined.
- Once cooked, remove the tajine from the heat. Serve hot, garnished with additional fresh coriander or parsley if desired. This dish pairs well with couscous or warm fluffy bread.
