Ingredients
Zest of 3 organic or unwaxed lemons
500 ml grappa
125 g caster (superfine) sugar
Directions
- Place the lemon zest in a 1-litre capacity sterilised bottle. Fill with grappa, seal, and stand in a cool, dark place for 7 days.
- Make a syrup by placing the sugar in a saucepan with 500 ml of water over low heat, stirring until the sugar dissolves. Bring to a boil, remove from heat, and once cooled, pour into the bottle.
- Seal and stand in a cool, dark place for 30 days.
- When ready, strain the mixture through a cheesecloth into another sterilised bottle and store it in a cool, dark place or the refrigerator for up to 6 months.
