Hummus with Grated Tomato and Fresh Basil

240 g hummus (store-bought or homemade)
2 ripe tomatoes
1 handful of fresh basil leaves, torn
2 tbsp extra virgin olive oil
1 tbsp lemon juice
Salt and black pepper to taste
Directions
- Cut the tomatoes in half and grate them using a box grater. Discard the skins. Place the grated tomatoes in a bowl and season with a pinch of salt, black pepper, and lemon juice. Stir to combine.
- Spread the hummus evenly on a serving platter or in a shallow bowl to create a bed. Spoon the grated tomato mixture evenly over the hummus. Scatter the torn or chopped basil leaves over the grated tomato and hummus. Drizzle the extra virgin olive oil over the entire dish. Serve immediately.

- For extra flavour, add a sprinkle of red pepper flakes or a dash of balsamic glaze before serving!
