Hummus with Artichokes and Crispy Garlic

Ingredients

  • 240 g hummus (store-bought or homemade)

  • 1 can marinated artichoke hearts, quatered

  • 4 cloves garlic

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tsp smoked paprika

  • Fresh parsley

  • Salt and black pepper to taste

Directions

  • Heat olive oil in a small saucepan over medium heat. Add the thinly sliced garlic and cook until golden brown and crispy, about 2-3 minutes. Be careful not to burn the garlic. Remove with a slotted spoon and drain on paper towels. Set aside.
  • In the same saucepan, add the quartered artichokes and sauté for 2-3 minutes until slightly browned. Drizzle with lemon juice and season with a pinch of salt and black pepper.
  • Spread the hummus evenly on a serving platter or in a shallow bowl to create a bed. Arrange the sautéed artichokes on top of the hummus.
  • Sprinkle the crispy garlic slices over the artichokes and hummus. Sprinkle with smoked paprika and chopped fresh parsley for a burst of colour and flavour.

Notes

  • Serve with pita bread or celery sticks to dip with!
  • For an extra touch, drizzle with a bit of the oil used to fry the garlic or a splash of high-quality extra virgin olive oil before serving.
