Caprese Salad with Fresh Basil

4 ripe tomatoes
200g fresh mozzarella
1 handful of fresh basil leaves
2 tbsp extra virgin olive oil
Salt and black pepper to taste
Directions
- Slice the tomatoes and mozzarella into even rounds. Pick fresh basil leaves from the stems.
- On a large serving platter, alternate slices of tomato and mozzarella. Tuck basil leaves between the slices, arranging them attractively.
- Drizzle the extra virgin olive oil over the assembled salad. Season with salt and black pepper to taste
