Ingredients

  • 2 ripe avocados

  • 200g fresh mozzarella

  • 1 handful of fresh thyme leaves

  • 1 tbsp extra virgin olive oil

  • 1 tbsp lemon juice

  • Salt and black pepper to taste

Directions

  • Slice the avocados thickly and tear the mozzarella into bite-sized pieces. If using cherry tomatoes, halve them.
  • In a bowl, gently toss the avocado slices with half of the fresh thyme leaves, a drizzle of extra virgin olive oil, a squeeze of lemon juice, and a pinch of salt and black pepper. Let it sit for a few minutes to absorb the flavours.
  • On a serving platter or individual plates, arrange the seasoned avocado slices and torn mozzarella. Sprinkle the remaining fresh thyme leaves evenly over the salad. Drizzle a bit more extra virgin olive oil and lemon juice over the entire salad. Adjust seasoning with additional salt and black pepper if needed. Serve immediately.

Notes

  • Optional: add some halved cherry tomatoes
