Ingredients

  • 2 medium eggs

  • handful almond flakes

  • handful cashews

  • 80 g cherry tomatoes

  • 2 avocados

  • 2 toasts of sourdough bread

  • 2 tsp parsley

  • 2 tsp oregano

  • 1 tsp salt

  • 1 tsp pepper

  • 1 lime

Directions

  • Toast sourdough bread until golden. Smash avocados with a pinch of salt, pepper, and lime juice.
  • Boil or poach eggs until the desired doneness. Cut cherry tomatoes in half and roast them in a grill pan, cut side down until caramelised.
  • Spread smashed avocado onto toasted bread slices. Arrange sliced eggs and roasted cherry tomatoes evenly on top.
  • Sprinkle almond flakes, cashews, oregano, parsley, cracked pepper, and salt over the toast. Drizzle with additional lime juice for extra zest.
  • Serve immediately and savour the irresistible combination of creamy avocado, savoury eggs, and juicy roasted tomatoes with every bite.
