950 ml vegetable broth
1 onion
2 cloves of garlic
Leftover veggies (anything you have on hand!)
2 tbsp miso paste
100g dry spaghetti
1 tsp chives
1/2 tsp ginger
1/2 tsp ground coriander
1 tsp crispy chilli oil
Directions
- Chop your leftover veggies into bite-sized pieces. Feel free to mix and match – carrots, mushrooms, spinach, whatever you’ve got!
- In a large pot, heat a splash of oil over medium heat. Add diced onion and minced garlic. Sauté until fragrant and translucent, about 3-4 minutes. Add the miso paste and the other veggies and sauté for another 3-4 minutes.
- Pour in the vegetable broth and bring to a gentle simmer.
- Break dry spaghetti into smaller pieces and add them to the simmering broth. Cook until al dente, following the package instructions.
- Add ginger and ground coriander. Taste and adjust seasoning as needed.
- Ladle the miso soup into bowls. Drizzle each serving with a teaspoon of crispy chilli oil for a spicy kick. Sprinkle chopped chives over each bowl for a pop of freshness and colour.
