Ingredients

  • 950 ml vegetable broth

  • 1 onion

  • ⁠2 cloves of garlic

  • Leftover veggies (anything you have on hand!)

  • 2 tbsp miso paste

  • ⁠100g dry spaghetti

  • ⁠1 tsp chives

  • ⁠1/2 tsp ginger

  • ⁠1/2 tsp ground coriander

  • 1 tsp crispy chilli oil

Directions

  • Chop your leftover veggies into bite-sized pieces. Feel free to mix and match – carrots, mushrooms, spinach, whatever you’ve got!
  • ⁠In a large pot, heat a splash of oil over medium heat. Add diced onion and minced garlic. Sauté until fragrant and translucent, about 3-4 minutes. Add the miso paste and the other veggies and sauté for another 3-4 minutes.
  • Pour in the vegetable broth and bring to a gentle simmer.
  • Break dry spaghetti into smaller pieces and add them to the simmering broth. Cook until al dente, following the package instructions.
  • Add ginger and ground coriander. Taste and adjust seasoning as needed.
  • Ladle the miso soup into bowls. Drizzle each serving with a teaspoon of crispy chilli oil for a spicy kick. Sprinkle chopped chives over each bowl for a pop of freshness and colour.
