Ingredients

  • 80 ml extra virgin olive oil

  • 3 garlic cloves, finely chopped

  • 1/2 tsp dried chilli flakes

  • 2 x 400 g tinned whole tomatoes, puréed

  • 500 g penne

  • 2 tbsp vodka

  • 125 ml thickened cream

  • 1 handful flat-leaf (Italian) parsley, finely chopped

Directions

  • Heat olive oil, garlic, and chilli in a large frying pan over medium heat. Cook for 1 minute until garlic is soft. Add puréed tomatoes and cook over low heat for 20-30 minutes until sauce thickens. Season to taste.
  • Cook penne in boiling salted water until almost al dente. Drain and add to the pan with the sauce. Return to medium heat and toss until pasta is well coated.
  • Add vodka to the pasta and sauce mixture, mixing well. Pour in cream, cover the pan, and simmer for 1-2 minutes.
  • Transfer Penne alla Vodka to a serving bowl. Sprinkle with chopped parsley and serve immediately.
