Elegant Salmon on Toast with Poached Egg and Avocado

2 medium eggs
6 slices of smoked salmon (1 slice is 30g)
80 g kale
1 avocado
1 red onion
2 tbsp capers
2 tsp parsley
2 tsp cracked pepper
1 lime
1 tsp salt
2 tsp sesame seeds
Drizzle of balsamic glaze
Directions
- Toast sourdough bread until golden. Cut red onion into rings, and avocado into slices. Poach eggs in simmering water with a splash of vinegar until the whites are set but the yolks are still runny.
- Place kale on toasted bread slices. Arrange 3 slices of smoked salmon on one side, and avocado slices on the other. Carefully place a poached egg in the middle of each toast.
- Top each toast with red onion rings, capers, parsley, cracked pepper, salt, sesame seeds, and a drizzle of lime juice and balsamic glaze.
- Serve immediately and enjoy the luxurious blend of flavours and textures in every bite!
